How to Make Coconut Flour Pancakes (Gluten free, Grain free, Paleo)

Whether or not you are on a grain-free diet, you will love these pancakes. Brian doesn't typically like the flavor of coconut, but even he loved these. The recipe is from one of my favorite grain-free cookbooks, Cooking with Coconut Oil by Elizabeth Nyland. The author blogs at GuiltyKitchen.com where she shares healthy living tips and writes about her Paleo lifestyle. Her book is beautiful and contains lots of wonderful gluten-free and grain-free recipes, including new twists on old favorites. 

These pancakes are really, really good. And, what's even better, they are very filling and very nourishing. I also loved how easy they are to make. Even Little Owl can help me make them (and actually help... rather than, you know... what two year olds normally do in the kitchen...). ;) Every recipe I've tried from this book so far has been simple to make and delicious. There are a few ingredients for this recipe in particular that I didn't have on hand in my kitchen (hemp hearts and flax seeds) but they were very easy to find online or at my local health food store. 

If you haven't already, I highly recommend checking out both Nyland's book, Cooking with Coconut Oil and her blog. Whether or not your family is grain-free makes no difference, you will love the recipes in this book. There are pictures for almost every recipe, too, which I find really helpful since I am a very visual person... but you don't want to look through this book when you're hungry! :)
Now, without further ado... the recipe you all came here to see:

Coconut Pancakes 

from Cooking with Coconut Oil by Elizabeth Nyland

Yield: 18 pancakes
  • 1/4 cup coconut oil, melted (where I buy)
  • 1/4 cup nut butter (such as almond, cashew, or macadamia)
  • 2 tbsp honey or maple syrup (optional)
  • 4 pastured eggs
  • 1 tbs pure vanilla extract (make your own!)
  • 1/2 tsp apple cider vinegar
  • 3 tbs coconut flour (where I buy)
  • 1/2 tsp ground cinnamon
  • 1/4 tsp sea salt
  • 1 tsp baking powder
  • 1 tbsp ground golden flax (I buy whole and grind my own so it's fresh)
  • 1 tbsp hemp hearts (where to find
  • 3 tbsp mini chocolate chips (optional) (where to find)
  • Coconut oil (for frying; optional) 

  1. In a large bowl, mix the coconut oil and nut butter until smooth. Mix in honey or syrup if using. 
  2. Beat in the eggs one at a time until combined completely.
  3. Whisk in the vanilla extract and apple cider vinegar and set aside.
  4. In a separate bowl, mix the coconut flour, cinnamon, salt, baking powder, flax, hemp hearts, and chocolate chips, if using.
  5. Place a nonstick or cast-iron pan on the stove and heat on medium-low (preheat it for a good few minutes). Melt the coconut oil in the pan if using. When the pan is hot, mix the wet ingredients with the dry and drop by spoonful into the pan. 
  6. Cook each pancake until bubbles form and pop. Flip pancake over and cook until done, about 2 to 3 minutes total per cake. Serve immediately or cool and freeze on baking trays.

I have a confession.

I love chips. 

And when I say love, I mean love, as in close to worship.... Of all the foods I have given up since switching to a diet full of "real food" (as opposed to processed cr**) giving up chips is something I've done... sometimes.

Sure, I choose the organic, non-gmo versions of chips... but they are still chips. They are still made with rancid vegetable oils which I really, really, really should not be putting in my body.

So discovering Jackson's Honest Chips was a BIG. DEAL. 

It's coconut oil, baby!


What's different about these chips? They are fried in coconut oil! Goodbye rancid vegetable oil. Hello goodness. We have all heard the health benefits of coconut oil, even if not everyone understands just how bad vegetable oils are for our health....

The ingredient list on Jackson's Honest Chips reads as follows: organic potatoes, organic coconut oil and sea salt. That's it, folks. Honest, to honest, goodness. And only that.

I know they are better for me... But how do they taste? 


So what do chips fried in coconut oil taste like? Well, let's be honest, they taste different than what you are used to potato chips tasting like. There is a definite flavor difference. Vegetable oils are processed, denatured, stripped, and destroyed until they are a lifeless, death-giving, tasteless, rancid version of something our ancestors would have never recognized as food.

Coconut oil, however, has a taste, a flavor, it has character. So, yes, these chips taste different than your regular potato chips. And they are delicious. It took me three or four chips to adjust to the flavor difference... but than I had no problem eating four bags over less than two days. (Did I just say that? That's embarrassing....)

I already have so many ways I love to use coconut oil every day, I guess I can add eating chips to that list! And I highly recommend you do, too.

Because yesterday marked the two month anniversary of LittleOwlCrunchyMomma, because I love chocolate and because you know I love coconut oil, today I am sharing with you my FAVORITE thing to make with coconut oil as well as my new favorite brand of coconut oil... and a chance for you to WIN some.


(Magic-less) Magic Hard Shell Chocolate Topping


You Will Need:
1/4 Cup Gold label Virgin Coconut Oil (Where to buy.)
3 Tbs cocoa powder 
1 Tbs honey
1/2 tsp vanilla
Serves 4-6 

To start, measure out your delicious, heavenly coconut oil.



Add all ingredients (except vanilla) to a small sauce pan. Melt over lowest possible setting, stirring constantly. 



When completely melted, stir in vanilla. 



Spoon from bottom of sauce pan onto ice cream. Enjoy!

15 Ways I Use Coconut Oil Every Day

If I were a poet I would compose a love poem to coconut oil. It might start something like this: "Oh, Coconut Oil, how I love thee. Let me count the ways." 

I know, right? Terrible. Thankfully for you I am not a poet. So I won't bore you. But I will tell you how I use coconut oil every day. Maybe some of these ideas you already know about. Maybe some will be new. Maybe I've left out some. But regardless, here are



15 Ways I Use Coconut Oil Every Day



  • Put it on my legs before shaving in the shower rather than using scary Shaving Cream.
  • Slather it on after a shower instead of spending time making or buying expensive Body Lotion.
  • Use it in place of rancid vegetable oils in Baking.
  • Use it for Popping Popcorn instead of vegetable oil. 
  • Use it for Sauteing delicious veggies.
  • Use it as an all-natural Lubricant for the lady region(Don't worry.... it's in a different bottle than the one for kitchen use...) 
  • Take it by the spoonful as Appetite Regulator
  • Mix it with a little bit of baking soda to make a super easy, cheap, effective, natural Deodorant
  • Use it as the base for making homemade Chocolate
  • Use it as a natural Gel if my hair gets fly-aways.
  • Place a bit on the ends of my hair for a natural Conditioner.
  • As a replacement for Nipple Cream for us lactating mothers.
  • Sometimes as Baby Lotion instead of my beloved olive oil.
  • As Face Lotion.
  • As a quick Lip Balm.
