Crepes with Soaked Whole Wheat Flour



I adore French cuisine. Particularly, I love crepes. They are the perfect weekend breakfast. I love how versatile they are. They can be served savory or sweet. They can be served as a meal or as dessert. And, they are super simple to make. I was very happy with how this recipe turned out. Unlike, white flour crepes, these don't make me regret my choice to eat them afterwards. Because the flour is soaked, they are more nutritious, more filling, and easier to digest.

Crepes with Soaked Whole Wheat Flour


You Will Need:

1 cup whole wheat flour
1 cup whole milk yogurt
1/2 cup milk
1/4 teaspoon Celtic sea salt
2 eggs, beaten
Fat of choice

Makes 10 crepes

Soak flour in yogurt overnight. The following morning place soaked flour in blender with milk, salt and eggs. Blend for 45 seconds or until thoroughly mixed. Heat a pan on medium low. Add approximately 1/2 teaspoon fat of choice to pan. Allow to melt. Pour in 3 tablespoons of batter. Spread around the pan. Cook until the top begins to look dry. Flip and cook on opposite side for roughly thirty seconds. Repeat with remaining batter. Serve warm with toppings of choice (e.g. ricotta cheese and pear butter, banana and Greek yogurt, bacon and cheese, etc.)

Lacto-Fermented Pear Butter


One of my New Year's resolution from 2012 was to begin learning to ferment fruits. I have done a good job of incorporating fermented dairy (like Greek yogurt) and veggies (like sauerkraut and carrot sticks), into our diet, but this was a new step. I was very happy with how this recipe turned out. Try your own variation. Go ahead and experiment, any dried fruit should work well!

This is similar to the recipe from Nourishing Traditions by Sally Fallon, only greatly reduced (even we can't eat 2 quarts of pear butter in two months!) and simplified.

You Will Need:

1 cup dried pears (I used Asian pears)
1/2 teaspoon Celtic sea salt
1 tablespoon whey
1 tablespoon raw honey
1/2 teaspoon cinnamon, optional

Makes 1 cup

Cook pears in water until soft. Drain water (can be saved for use in smoothies) and place softened dried pears in blender with remaining ingredients. Place in one cup mason jar. Cover tightly and leave out on the kitchen counter for two days. Transfer to refrigerator  Enjoy within two months.

Eat any way you would jam. I served ours this morning with my soaked whole wheat flour crepes with homemade ricotta.  Also delicious on toasted bread with peanut butter.

(Magic-less) Magic Hard Shell Chocolate Topping


You Will Need:
1/4 Cup Gold label Virgin Coconut Oil (Where to buy.)
3 Tbs cocoa powder 
1 Tbs honey
1/2 tsp vanilla
Serves 4-6 

To start, measure out your delicious, heavenly coconut oil.



Add all ingredients (except vanilla) to a small sauce pan. Melt over lowest possible setting, stirring constantly. 



When completely melted, stir in vanilla. 



Spoon from bottom of sauce pan onto ice cream. Enjoy!
