I love blue cheese. I adore blue cheese dressing. I use it for Cobb salads, dipping carrot sticks, cucumbers, celery or any other crunchy veggie I can get my hands on. The problem is, blue cheese dressings that you can buy at the store have around fifty ingredients. I try to make it a rule to not eat anything I can't pronounce or couldn't (somewhat) easily make myself. Unfortunately, this typically rules out buying blue cheese dressing. I was happy to figure out an easy solution: making my own. It's simple, contains three (easy to pronounce) ingredients, and is even more delicious than what you can buy at market.
You Will Need:
Note: all measurements are subjective--make to your preferred taste
3/4 cup delicious blue cheese (there are a lot of shades--shop (taste) around and see what you like)
1/2 cup whole fat, no additive sour cream (preferably organic)
1/2 cup milk (preferably raw)
Celtic Sea Salt
Pepper
To start, crumble your blue cheese in a bowl with a fork. (Note: if you want chunky blue cheese dressing, set aside a bit of cheese to add in at the end.)
Next, add the milk and sour cream.
Then, blend all ingredients together with a hand held blender. Make sure you scrape the bottom with a spatula to make sure no cheese is sticking.
Add salt and pepper to taste. Voila! Creamy blue cheese dressing. (A few variations: If it is thicker than you would prefer, add more milk. If you want "chunky" blue cheese dressing, add in more crumbled , bits of blue cheese.) Enjoy!

Where do you get your sea salt? I stil have a lot leftover from trader joe's, but I want to get a higher quality kind next.
ReplyDeleteI use EDEN's CELTIC SEA SALT. You can get it at MofC, Kiva, or Capella's. It is coarse, but I have a little mortar and pestle I use to crush it. The key to buying sea salt is you want it to be damp. That way you know it is rich in minerals.
