I absolutely love ketchup. I eat it on fried potatoes, with eggs, on meat or on practically anything when the mood strikes me. This recipe is based of the recipe for "Sunshine Ketchup" in Kristen Michaelis' wonderful book, Beautiful Babies. Michaelis runs the popular blog, Food Renegade, where she shares information on nutrition, great recipes and a dose of good humor. If you haven't already, be sure and check out her blog.
I highly recommend, Beautiful Babies, for anyone who is thinking about becoming pregnant, is pregnant, or has kids. Michaelis' book primarily focus on nutrition for fertility, pregnancy and babies first foods. But this book also contains an awesome collection of recipes. I occasionally use it to reference information, but I keep it in my kitchen because I have fallen in LOVE with the recipes!
Particularly her recipe for ketchup. I had modified her original slightly to fit my needs:
Easy Homemade Ketchup
You Will Need:
12 oz. organic tomato paste (Find it here)
1/3 cup water
2 Tbsp. probiotic whey (How to make it)
2 tbsp raw apple cider vinegar (Find it here)
2 tbsp organic raw honey (Find it here)
1/4 tsp mustard
1/8 tsp allspice
1/2 tsp Celtic sea salt (Find it here)
Large bowl for mixing
Clean glass jar with lid
Mix all ingredients in a large bowl until thoroughly combined. Transfer to a clean glass jar. Close lid tightly. Leave on your kitchen counter for 2-3 days. Store in the refridgerator. Enjoy!

Sounds really good! I really want to make ketchup from my own tomatoes but I have a hard time getting it cooked down enough to be paste consistency. Definitely trying again :)

DeleteI was lucky to get some into the freezer.. I ate most of mine....... YUM :)
DeleteTry cooking your tomatoes down in your crockpot. I take out as much juice as I can and cook it down for a couple od days. Makes great tomato paste too.

DeleteHey! Sorry I didn't respond earlier! You could substitute any sort of active vegetable culture no problem... juice from sauerkraut or other pickled veggies for example.
DeleteYou could always try water kefir. I have no idea how that would turn out... but I would imagine it would just make it a little sweeter... if you try it, let me know how it goes!

DeleteI want to make sure I do this right; so I leave it out of the frig for a few days then I store it in the frig after that? We don't use a ton of ketchup so how long should it last? I make my own Greek yogurt so I always have lots of whey.

DeleteYou could always store part of it the freezer or make a half batch if you don't think you will go through a full-batch fast enough.
It should last several weeks in the fridge, I don't know exactly, though because we always go through it pretty quickly. Athena just LOVES the stuff. :)
There have been a couple times when it has gotten pushed to the back of the fridge and forgotten about. I am not sure how long it was back there, but when I pulled it out it has a bit of white mold on the top. I just scraped it off, like you can do with jam, and ate it. Of course, not everyone would be comfortable with that, and you have to make your own call on something like that... but it tasted fine still and we are all still here. :)

How long will it stay good in the fridge?
ReplyDeleteNot long at our house, lol! We love it. It should stay food for a few weeks to a month, though. You could also put some in the freezer.
DeleteI was just wondering, why Celtic sea salt? Would ANY sea salt work? And is it available only online?
ReplyDeleteI always use Celtic sea salt because of it's minimal processing and high mineral content. You could, of course, use other salt. It's just what I use and recommend.

ReplyDeleteOkay. You've convinced me to try this. The Stud Muffin (husband) has disliked every homemade ketchup I've tried and I'm a chef! Yikes! I think I'll make this and empty out the organic ketchup from the bottle I purchased the other day and hide it in there and see if he notices. :) It worked for raw milk, so a girl can hope.

ReplyDeleteHey Amanda! Good question. ;) I thought about clarifying in the recipe... but I guess it really depends on how spicy you want it. I use prepared mustard. But, if I was in a pinch and didn't have any you could probably just as easily use dried. It would just be a little hotter! ;) Hope you enjoy! <3 <3 If you think of it, let me know how you like!

ReplyDeleteI don't remember which site I read it on, but somewhere out there I read that after you get your tomatoes sauced put them in the fridge overnight and in the morning pour off the almost clear liquid that rose to the top and you're almost to paste. Then you can also can the tomato water and use it for soups or whatever. Works great!
